I did mention I would in an earlier post that I might divulge the Pizza base recipe I use, so as promised here it is.
Basic Pizza Dough
1kg Pizza & Bread flour
10g salt
10g sugar
20g dry yeast
660ml cold water
Mix all the dry ingredients in a large bowl & make a well in the centre.
Pour 600ml of the water & gradually incorporate it into the flour (should take around 4-5 minutes).
If the dough is too dry add the rest of the water or a little more flour if too wet.
Then you have to knead the dough. I do this by hand & will take around 10 minutes. It should be smooth & have enough elasticity to stretch very thin.
This quantity makes around 6-8 pizzas depending on the size you want. Normally I make half the amount unless I have a large group coming over.
Now you are ready to make pizzas.

As you can see there is a slight char on one side!
So team now that I have my pizza oven, what is left to whine about!…I am sure I can think of something new that I need & start the process again!

Turns out you can buy that cookbook at your local bookshop and yes Gusband of course has a copy. Those that know me will know there is one photo I'm dying to comment on but alas I'm not allowed.
